Hi! We are Noel and Crystal Thomas and are the owners of a small poultry farm in Fayette County, TX - specifically in the tiny town of Ellinger...half-way between Houston and Austin on Highway 71 W.
Our chickens at the present time are primarily Americunas or as they are popularly known - Eastereggers!
Our hens lay blue - green - off white and sometimes almost pink eggs! We have a few hens of an undetermined breed who lay light brown eggs.
Our birds are free-range pastured chickens who roam our two acres doing all the things healthy chickens do...eating bugs, taking dust baths and in general trying to be the boss of everyone here....they don't succeed... but they are mighty entertaining to watch as they try!
Anyway, this is what some of the eggs and the deep color of their egg yolks look like...
Right now all the eggs we have available are already spoken for...BUT (drum-roll please) we are expecting a shipment of 30 new chicks sometime around the end of May, which means that we'll have many more eggs available around the end of October! We are very excited about this!
We are getting some specialty and rare-breeds that lay brown and the very dark brown, almost mahogany colored egg shell.

Columbian Wyandottes
